Certified Organic Rolled Oats
Product of Canada/USA. Oat groats are inherently gluten-free but cross-pollination and cross-contamination with non-gluten-free grains can occur during cultivation and processing. We uphold strict standard operating procedures in order to avoid cross-contamination during our packaging process, but we cannot guarantee that the products we use are gluten-free. Organic Maple Syrup
Maple syrup is made from concentrated maple tree sap. We only work with Canadian producers of certified organic maple syrup. Maple syrup is high in antioxidants, as well as minerals such as zinc, magnesium, calcium and potassium.
Organic Maple Sugar
100% made of pure maple syrup from the condensation of the sugar maple tree’s sap picked up during springtime. This high-quality maple sugar can easily replace refined white and brown sugars and honey in recipes.
Organic Oat Flour
Flour is produced from separating the raw oat groats from the outer hull by centrifugal acceleration and winnowing and milling into a fine powder. Oats are about 66% carbohydrates (including 11% dietary fiber and 4% beta-glucans), 7% lipids and 17% protein. We buy Canadian grown and milled, certified organic, non-GMO oat flour that is stone-ground from heirloom oat groats.
Organic Brown Rice Four
Stone-milled certified organic medium grain brown rice is used to make the finest organic brown rice flour. This flour includes the bran of the rice which creates its light almond color. Our rice flour is very finely milled to prevent the flour from tasting gritty, which is a common characteristic of many brown rice flours.
Organic Raisins, Autumn Royal
Autumn Royal raisins are deep purple with subtly tart yet sweet, molasses-like taste. The skin of Royals is also notable for its wonderful firm texture. Many dried fruit manufacturers use oil in the processing of dried fruit products, but these seedless raisins are manufactured without the addition of any oil.
Organic Cacao Powder 100% Criollo Arriba
From the Criollo variety of cacao beans. is sourced from the native-born heirloom species thriving in the high-elevation volcanic soils of the Arriba Nacional forest of Ecuador. Following the fermentation process, the beans are sun-dried rather than roasted. This helps to maintain the cacao beans natural high level of vitamin C, which is otherwise destroyed by heat in the roasting process.
Organic Cacao Paste 100% Criollo Arriba
Sourced from the same Criollo variety of cacao beans as our cacao powder, cacao paste is the result of slowly crushing the raw cacao nibs into a thick brown liquid, (aka cacao mass or liquor) which is made up of cocoa butter and suspended cocoa particles.
We generally stick to 2 types of dates – Medjool and Deglat Noor. Dates are packed with an impressive list of phytonutrients, vitamins, and minerals. When dates begin to dry out the sugar moves to the surface of the date as a crystal powdery substance. This is not an indication that the dates are off. Wash the dates or heat them to remove or absorb the sugar. As a rule, we estimate the shelf life of dates to be 45 days at room temperature; 6 months refrigerated; and 1 year frozen. Dates will not necessarily go bad at room temperature, but they will tend to dry out.
Product of Spain. Almonds are a rich source of antioxidants and vitamins like B2, biotin, and E as well as many essential minerals such as calcium, iron, magnesium, manganese, potassium, phosphorus, copper, and zinc. They are also rich in dietary fiber and mono and polyunsaturated fats.
Shelled and raw. Technically a walnut is the seed of a drupe or drupaceous nut – not a true botanical nut. The walnut is high in monounsaturated and polyunsaturated fats and omega-3 fatty acids. Walnuts are a good source of protein and dietary fiber.
Organic Unsulfured Dried Apples
Apples contain a wide range of antioxidants including quercetin, a type of flavonoid which may help regulate blood sugar by inhibiting the enzymes that digest carbohydrates, thus slowing down the release of sugars into the bloodstream. A good source of vitamin C, apples also boost the body’s production of collagen.
Cashews are seeds that cling to a cashew apple, the fruit of the cashew tree. Cashews are rich in oleic and palmitoleic acids, abundant in manganese, potassium, copper, iron, magnesium, zinc, and selenium, as well as a good source of B vitamins and folate.
Mori Nu tofu is a non-GMO, gluten free organic brand of tofu that we love! The tofu is wrapped in recyclable, aseptic packaging and thus requires no refrigeration. During the packaging process, the food inside is never exposed to light, air, or bacteria, all of which can lead to spoilage.
Organic Almond Butter
We only buy wholesome organic almond butter that’s free of sugars, salt, extra oil, or any preservatives and artificial flavourings. Nut butters are generally shelf-stable for a year without the need for refrigeration.
Coconut Milk Powder
Product of Viet Nam, and produced from the creamy, rich liquid made from the meat of mature coconuts (not the liquid that can be drained out from a coconut that has been punctured). It is high in saturated fat, mainly lauric acid (also found in mother’s milk), along with Vitamins B, C, and E and a multitude of antioxidants. Contains 62.5% fat. Coconut milk powder contains 2.5% tapioca maltodextrin, and 0.05% organic acacia gum as flow agents
Organic Instant Coffee
Always fairly traded. This coffee originates from the mineral-rich soils of the volcanic highlands of Papua New Guinea and is then processed Germany. It has lower acidity due to a slow roasting process.
Organic Coconut Sugar
Product of Indonesia. Not to be confused with palm sugar (which is similar but made from a different type of palm tree), coconut sugar is a natural sugar made from coconut palm sap, which is the sugary circulating fluid of the coconut plant.
Organic Cane Sugar
Product of Brazil. Pioneered green cane harvesting, which is the largest sustainable agriculture project in the world. The Green Cane Project farms over 20,000 hectares (49,500 acres) of certified organic cane fields, is carbon neutral and saves over 25,000 metric tons of CO2 per year. Yields are consistently higher than conventional fields and biodiversity is 25 X higher than conventional fields, including some rare species.
Organic Sorghum Flour
Organic and gluten-free, sorghum flour has a light color and texture and a mild, sweet flavor, which makes it perfect for gluten free baking. Product of the USA.
Whole White Flour
Product of Canada/USA. Whole White flour is milled from white whole wheat, not red, which makes it lighter in color and less bitter in flavor than regular whole wheat flour. Since it is milled from a whole grain and has the same nutritional value of regular whole wheat flour, it is a great choice for baking.
