Luscious Lemon Meringue Pie


A no-fuss modern twist on the classic lemon meringue pie! Just like our gluten-free Lemon tart, this dessert builds on the lovely lemon flavour with a sky-high meringue made from aquafaba. Easy to make, stunning in its presentation and lusciously smooth and custardy. It’s sure to become a favourite  You’ll want to serve this time and time again. *Currently not available by subscription.



INGREDIENTS: Crust: organic raw almond flour, organic tapioca flour, organic flax seeds, natural pink, finely ground Himalayan salt.  Filling and Topping: organic coconut milk, organic coconut butter, organic agave syrup, fresh lemon juice, non-GMO aquafaba powder, pure vanilla extract, agar agar powder, organic turmeric powder.

Ingredients you will need: 2 large fresh lemons.

Special equipment you will need: food processor, standing mixer, 24 cm (9-inch) non-stick fluted tart pan with removable bottom.

Bake Time: 45-55 mins crust and filling: Set Time: 2 hours  Servings: 12 recommended.
